(5 volume set) Scranton, PA. 1925. ****************** According to the Preface, this set of five volumes covers the various phases of cookery as carried on in the early 20c home, and they contain the same text as the Instruction Papers of the Institute's Course in Cookery. Along with being a resource for a variety of delicious dishes popular at the time, this set is of unique value to the culinary historian. Content. Each book contains very detailed instructions for preparing various dishes. Each is heavily illustrated depicting cooking techniques, food presentations, utensils, etc. It is beyond the scope of this listing to summarize the vast amount of information included in this set of cookbooks. Volume 1: Essentials of Cookery, Cereals, Bread, Hot Breads Volume 2: Milk, Butter, and Cheese, Eggs, Vegetables Volume 3: Soup, Meat, Poultry and Game, Fish and Shell Fish Volume 4: Salads and Sandwiches, Cold and Frozen Desserts, Cakes, Cookies, and Puddings, Pastries and Pies Volume 5: Fruit and Fruit Desserts, Canning and Drying, Jelly Making, Preserving, and Pickling, Confections, Beverages, The Planning of Meals. Physical Description. Each book is an original. T are no dust jackets. Each measures approximately 9" x 6" x 3/4". The pages of each phase of cookery are numbered separately. Each cover is identical with cloth covers of dark green with pressed lettering on the front and gold lettering on the spine. Each is heavily illustrated with black and white photos, black and white drawings and a few color plates. Although they could have been written as textbooks, their very good condition and lack of markings indicates they were not used as textbooks. Condition. Each volume is in Very Good condition-intact with some signs of wear: Volume I: The pages are slightly yellowed. T is an inscription on the first flyleaf, in ink. The corners of the cover are slightly bumped. Volume 2: The pages are slightly yellowed. The corners of the cover are slightly bumped, and t is a very small stain on the cover. Volume 3: The pages are slightly yellowed. The corners of the cover are slightly bumped, and t is a small chip on the cover. Volume 4: The pages are slightly yellowed, stained and edge worn. The corners of the cover are slightly bumped, and t are a few stains on the cover. Volume 5: The pages are slightly yellowed, stained and edge worn. The corners of the cover are slightly bumped, and t are a few stains on the cover. Other than what is mentioned, I see no writings, paste-ons, hinge cracks, or evidence of doctoring.
