If you picked up a Popular Mechanics magazine back in the 50's 60's or 70's, it was filled with small ads selling all kinds of things. One of those things was the National School of Meat Cutting, Toledo, Ohio. It showed a Butcher at his cutting block with a Beef Round sitting there ready to be processed. Learn to cut Meat by Mail. Well, that's what I have here. The Whole Meatcutting Course, all the booklets. You'd finish each booklet, and at the end was a test you'd take, send it in and they would grade you and send you back the test with your grade, and the next booklet. It is both historical from a butcher's point of view(Me) and it's funny to see how everything was done by hand. Every aspect of the trade is in this book. Cutting Beef, Pork, Lamb, Veal, etc. Also are Lunchmeat and sausage recipes. Ordering for the meat market, inventory taking, everything involved in the trade including managing and merchandising. It's in decent condition, heavily bound, with removeable booklets if you wanted to look at each one indiviually. It looks like it's 70 years old, but not damaged or falling apart.
