Unused vintage 10.25" carbon steel chef knife made by the great Gustav Emil Ern in Solingen Germany. This are cabon steel which is eager to rust and has a few rust spots alone the tang in the handle, and near the heel (see photos) but otherwise is in amazing condition. Beautiful old new vintage carbon steel Gustav Emil Ern chef knife blade is 10 3/8" long, just shy of 2" wide at heel tapering from 1/8" thick at handle, overall length is 15 1/4". Handle is an old German design in beautiful stained European walnut over a full tang. A big but lightweight knife weighing in at 13.5 oz. nicely balanced and in unused condition. This knife was made well before the 1987 conversion to recycled steel by hand, unheard of today. The blade is very nicely ground in a slight convex from edge to spine and is a nimble but tough knife perfectly capable of taking on big and small jobs. This is a real time capsule back to the long gone days of Solingen knifemaking. Always avoid putting carbon steel in a dishwasher and avoid soaking as well, a quick wipe with a cloth or fast washing with out soap is best as is a periodic oiling, specially before storage. This knife has a good edge on it right now but I would be happy to hone it a bit finer to it's full potential if the lucky new owner so desires. Feel free to ask any questions. As always I offer very
