This is really a large, shallow pan that can be used on a large commercial stove or as a gratin pan in the oven, but which will probably best be appreciated hanging on your kitchen or restaurant wall. It's a true work of art.This large, heavy pan was manufactured in January of 1959 in the USA of quality copper bonded to stainless steel inside. The beauty of these pans is that they were designed for busy commercial kitchens and they combine the ability to delicately heat foods uniformly while taking a beating and coming out like new. They have short, sturdy handles that stay relatively cool and won't get in the way on busy stoves. They have thick stainless steel interiors that can stand scouring and it's good quality steel that truly doesn't stain, unlike the recycled stainless steel products currently made, which develop stains that can't be scoured off even with scouring powder and steel wool. It weighs 5 pounds, 6 ounces and measures 15 inches inside and 16 1/4 inches from rim to rim. It sits flat and doesn't spin or bow. The thick stainless steel handle is 9 inches long and sturdy, attached by 2 rivets. There are scratches on the bottom which probably won't buff out.
