Vintage Sabatier Carbon Steel French ChefÂ's Knife Jeune Factory 14 3/4" Long 8.1 Ounces - No Reserve You are bidding on a wonderful Vintage Sabatier Jeune Carbon Steel ChefÂ's Knife in Extremely Good Condition. This vintage French chef's knife is completely hand-forged from the finest virgin carbon steel with an integral blade/bolster/tapered tang and fitted onto a gorgeous dark mahogany handle using three brass rivets. The Knife weighs 8.1 ounces and measures 14 3/4 " long with a 9 3/4" blade with a width of 1 7/8" at its widest point. The blade has some stains but no pitting with a nice metallic ring sound. Condition of the blade is excellent (except for discoloration), with no damage to handles or blade. The three brass handle rivets are nice and tight.
