San Mai is a style of knife making where a hard core steel is used to form a blade's edge and then another metal is forged to the core as a jacket. This knife jacket is made of stainless Damascus steel that is folded 67 times to produce deep, rich patterning. The core is made of VG-10 which is a high quality, cutlery grade stainless steel that is produced in Japan. It is sometimes referred to as Seki City Damascus after the Japanese city famous for its production. Stainless San Mai is usually seen in high end Japanese kitchen cutlery. It also produces sport utility blades that are as beautiful as they are functional. These blades will perform with excellence under heavy use and because they are stainless, the blade will not rust and it does not have to be kept oiled.
