Vintage Nogent handled forged carbon steel chef knife just over 9 5/8 inch blade from tip to ferrule, 14 1/4 inches overall length. Markings have been washed away over the decades but it is certainly from one of the Sabatier companies. This was the quintessential French chef's knife until after WWII when market pressures made the labor intensive Nogent handle style un-competitive in an increasingly mechanized and soon automated world. These knives required many skilled craftsmen to make and the level of quality is evident, light strong and ideal for decades of heavy use. To those used to a heavy knife these might seem flimsy but don't be mistaken these knives are capable of everything one of its chunkier cousins can do, and then some. Blade has been re-sharpened many times, but is still very very usable, and blade is arrow straight with a minimum of pitting and virtually no scratches. I am guessing that it was originally an 9 3/4 inch knife. European walnut handle has no cracks and is very tight and firm. An excellent knife, from way before the conversion to recycled steel, ready to serve another 5 or 6 decades if treated with a modicum of respect. The pinnacle of French knife making for sure, these are highly sought after knives for a good reason, if you are looking for a great vintage French knife this is it. Free sharpening on
