Large Vintage Menu - LA TOUNDRA - Hotel Printing Co. for Gabriel Management - [Montreal, Quebec] Canada, Expo67. Eight-page menu on very heavy golden buff-colored stock, stapled at the fold and with an additional elastic band bound in - measures 8 x 18.5". Text in both English and French - Expo67 logo at lower right front cover. Illustrated on every page in brown and black with drawings of Eskimo and Arctic peoples (that appear to be from ancient native sources?). This restaurant was apparently built for Expo67, and apparently the Hall still exists today and can be rented for weddings and other occations. This menu was expensively produced and is as nice as any we have seen.The bill of fare had many unusual offerings, in two sections - Canadian Cuisine, and International Cuisine, both featuring regional specialties and Arctic specialties. The Canadian section includes a Roast Rib of Western Beef, Braised Maple Sugar Cured Ham, Okanagan Duckling, Tourtiere des Ursulines (minced pork, onion, and herb pie) and other farm/prairie/ranch/field/stream/French offerings, as well as unusual fish dishes, such as Baked Dore Outaouais (baked whole and filleted at the table), Ojibway Kee Wee Sen, and Northern Lake Trout - plus Smoked Ilkalu (Arctic Char), Beaver Tail Broth, and "Assorted Inuk Favorites", a Casserole of Kelalugak Beluga (whale read more
