Vintage forged carbon steel 12 inch plus flexible chef slicing knife made by Gustav Emil Ern, Germany's once premier culinary knife maker. An excellent carving knife, thin in width and thickness so as to reduce drag yet strong and springy so you can focus on your carving and not on what the knife is going to unexpectedly do, the old German carbon steel responds quickly to a sharpening stone or steel so a fresh edge is easy. Blade is 12 3/8 inches long, overall length is 17.5 inches with European walnut handle triple riveted to a featd (aka tapering in thickness characteristic of hand forged knives) full tang handle. This knife dates to the 50's or early 60's and is 100% unused in great condition, it picked up a couple of small pepper spots on the blade and a few spots of rust on the tang along the handle w it wasn't coated as well but otherwise this knife is in pristine condition. The blade is expertly hand forged from top of the line old virgin German carbon steel and has the perfect combination of flex and spring that you would expect, for me these are the gold standard of German knives. These were never imported into the USA in great numbers but were one of the highest regarded makers in Europe.
