Vintage/antique chef knife1902-1935 stamped Harrington Cutlery Co. DEXTER Southbridge Mass. The Goins encyclopedia of cutlery markings has the Harrington Cutlery Company (AKA Dexter) named as such between 1902 and 1935, before 1902 it was Dexter Harrington & Son.Carbon steel blade is 7 7/8 inches long and the overall length is 13 1/8inches. This knife has been re-pointed and the edge re-shaped, it was badly banana'd from years of sharpening, I used all wet grinding techniques to re-shape the blade so the temper has not been affected at all. The blade is very thin but stiff which leads me to believe that it has been hand forged, with a very high carbon content, I have no way of testing the hardness but I would hazard a guess at around 58-60 Rockwell. If anybody out t knows let me know.Condition is good, like I said earlier it has been re-pointed and re-shaped, I believe that it had been cleaned recently with what looks like a felt wheel as well but that was not by me. Blade has minor pitting-see photo of stamp for detail of metal surface, dark olive/black manmade (celluloid?) 3/4 tang handle is solid and shows decades of handling and use, a nice hand smoothed texture, with a very crisp DEXTER on the handle. Knife is shaving sharp and ready to use, blade has a nice gentle curve and no hollows. See photos for additional details and read more
